Is it still a specialty when you specialize in a lot of things?
For instance, if you are a doctor and you work in cardiology and pulmonary and endocrinology, etc. Is that still specialty? I ve seen this one person put in in her profile that she specializes in lots of areas. What do you think?

This is called a General Physician, or GP.
The problem is that the GP know a little about everything, but doesn't know a whole lot about anything. Tjhis is your "Family Doctor", the one you go to FIRST, and who will then REFER YOU to a Specialist.
A GP is the first stage of "being a doctor", and this is what you will be when you first get your MD license. it is AFTER that when you declare your speciality -- and spend another 4 or 6 years in school do learn ONE thing -- cardiology OR pulminology OR endocrinology.
Having 2 or more specialiteis is probably NOT possible.

You need to ask which specialty she is board certified in. That's the specialty that counts.
Quite frankly, while my GP can handle a sprained ankle, I would not go to my GP for a hip replacement. My GP can handle my thyroid problems but for thyroid cancer, I'll see both an oncologist and an endocrinologist.

well it's difficult to be multi talented and be good in all those fields there is an old saying Jack of all trades master of none so I would sooner have the master of one or the specialist in one I would say she is taking multi tasking to the extreme
