Any language, any words that mean specifically the head of the bread that forms above the pan?

Update:

Okay, not the crust but the part that has billowed out of the pan.

    The rounded part that sticks up past the side of the pan (the top part of the loaf) is called the "crown".

    The arrow points to the crust. It's корка хлеба in Russian.
