Photography help, please! Is there a way to print digital pics so the time and date stamp will show? Need to prove date photo was taken.?

You do not need to print it out to prove the date/time. What you need to do is to provide the original file and have the people who've requested proof of the date/time analyze the exif data embedded within the file. When ever a photo is taken the date & time (among other things) are recorded. This is commonly called the exif data and can be read by using exif data readers. Windows can show the date/time the file was created by right clicking on the file, choosing properties, and then by clicking on the details tab.
There are also stand-alone exif data readers that show far more information than what Windows does.
So all you need to do is send a copy of the file which will have the identical exif data as the original. However, they may still have issue with this as it is possible to alter the exif data, but deal with that issue if/when it arrises.

There are programs like xnview that will put information on your print like creation date and time. However, this doesn't prove anything since the creation date and time can be changed with programs like jhead (I do this when I forget to change time zone or my camera clock is off) and EXIF Tool. You can also view the EXIF meta data with programs like Opanda, EXIF Tool, and jhead which will have the creation date and time.
If this is for a court case, then there are programs that can tell if the image has been altered, however, a few years back someone cracked the Nikon hash making it possible to alter images and still come up as not altered.
