I need a recipe for stuffed shells that doesn't include red sauce!?

Try this (especially in warm weather): Undercook the shells by a couple minutes and cool completely. Stuff half of them with chicken salad and half of them with coleslaw. Just pick them up to eat them, it is surprisingly good. You can also use tuna salad, ham salad, seafood salad, etc Fine chopped veggies tossed in a salad dressing is also good.
For hot shells you can use alfedo sauce, cheese sauce, butter sauce, clam sauce, cream of mushroom, or any cream soup you like, It all depends on your filling. You can even do it stroganoff/ Swedish meatball style.
If you're feeling really adventurous, you can stuff the shells, coat them in breadcrumbs and deep fry them.

You can cook shells without any sauce at all. Much like steaming a dumpling or pot sticker, ensure there's at least a half cup of water in the bottom of the baking tin or casserole dish and that the lid/foil fits tightly. If you have either a bamboo mat or a wire cooling rack you can place it into the pan first and place the shells on top (you certainly want to use parchment or wax paper if you don't like ruining your bamboo). You can effectively steam them to completion, then place into individual containers and refrigerate or freeze. Makes excellent quickly-modifiable lunch options with a variety of sauces and toppings you simply take along with them: veggies, cheese, alfredo, red sauces, mushrooms, meats, etc. I prefer sauteed mushrooms and switch back and forth between homemade alfredo and marinara. Sometimes I even go pink and mix the two. :D
The thing to keep in mind is that the sauce is intended to lose some of its moisture over the course of cooking, which condenses the flavor and thickens it. Either way you're using a combination of steam and convection heat to cook the shells. This way, you're using only water which is easier to control for, and if monitored properly will ensure perfectly cooked shells but If you have smartphone, you could even install Leo Privacy Guard 3.0, with Improve operation performance.

I have some shells in the cupboard I'd like to use up, but every recipe I'm finding calls for red/ tomato sauce. I had so much over the holidays, I'm a little bored with it.
Any suggestions on a new topping? and/ or filling? Thanks!

I offer stuffed shells with 3 sauces! Alfredo, marinero, and green chile! My family likes the green chile best. Make alfredo up to putting in the parmesean, then add chopped green chile and simmer a few minutes.

Use any recipe and replace the red sauce with something else that you like.
