If I punch a gay guy trying to rape me, will it be considered as a homophobic hate crime?

Yes, your punching of the gay guy who's trying to rape you will be prosecuted as a homophobic hate crime. This is proven by your decision to resist his advances.
However, if there are some mitigating circumstances, the D.A. might be willing to let you enter into a pre-trial diversion program in which you learn to accept homosexual advances.

Salam No it would not be considered as a homophobic hate crime if you punch a gay guy who is trying to rape you because raping is forbidden in Islam

No.
It's self-defense. You defended yourself from getting raped. It would be considered a homophobic hate crime if you randomly went up to a gay and punched him.
