vegetarian recipes are pretty easy to do. You can take any meat recipe and switch it to vegetarian. In fact many foods we eat are naturally vegetarian. Some vegetarian books get kind of crazy with complicated recipes asking for odd ingredients. Its not necessary at all.
For 15 years I cooked both vegan, vegetarian and meat based soups, salads, sandwiches, main dishes, side dishes, etc as a chef. It was interesting and creative. Mostly we just took basic recipes and switched things up to become vegetarian.
A great example is stuffed peppers or cabbage rolls. Both usually contain ground beef. We filled either one with a mixture of kasha, wild rice, mushrooms and onions, well seasoned and topped with tomato sauce and baked as usual.

Ingredients:
1 (16 ounce) package dry penne pasta
1 head escarole, chopped
1 (15.5 ounce) can cannellini beans, with liquid
1 (14.5 ounce) can diced tomatoes with garlic and onion, drained
salt and ground black pepper to taste
Directions:
Bring a large pot of lightly salted water to a boil, and cook the penne pasta 8 to 10 minutes or until al dente; drain.
In a skillet over medium heat, cook and stir the escarole, cannellini beans and liquid, and diced tomatoes with garlic and onion until heated through. Season with salt and pepper. Toss with the cooked pasta to serve.

Ingredients:
Good olive oil
2 large yellow onions, cut in half and sliced
2 garlic cloves, minced
1 pound medium round potatoes, unpeeled
3/4 pound zucchini
1 1/4 pounds medium tomatoes
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon fresh thyme leaves, plus extra sprigs
2 ounces Gruyere cheese, grated
Directions:
Preheat the oven to 375 degrees F.
Brush a 9 by 13 by 2-inch baking dish with olive oil. In a medium saute pan, heat 2 tablespoons of olive oil and cook the onions over medium-low heat for 8 to 10 minutes, until translucent. Add the garlic and cook for another minute. Spread the onion mixture on the bottom of the baking dish.
Slice the potatoes, zucchini, and tomatoes in 1/4-inch thick slices. Layer them alternately in the dish on top of the onions, fitting them tightly, making only 1 layer. Sprinkle with salt, pepper, thyme leaves, and thyme sprigs and drizzle with 1 more tablespoon of olive oil. Cover the dish with aluminum foil and bake for 35 to 40 minutes, until the potatoes are tender. Uncover the dish, remove the thyme sprigs, sprinkle the cheese on top, and bake for another 30 minutes until browned. Serve warm.

ex: Easy, cheesy, homemade pizza
Ingredients:
Crust-
1 0.25-oz. pkg. active dry yeast
1 tsp. sugar
2 cups whole-wheat flour
1 cup ground flaxseeds or flaxseed meal
1 cup all-purpose flour
1 Tbs. olive oil, plus more for coating bowl
Sauce-
1 tsp. olive oil
1 clove garlic, minced (1 tsp.)
1 24-oz. can crushed tomatoes
Toppings-
1 cup part-skim shredded mozzarella cheese
1 cup broccoli florets, cut into ½-inch pieces
1 small orange bell pepper, cut into ½-inch pieces (1 cup)
1 cup cherry tomatoes, halved
8 basil leaves, optional
Directions:
To make Crust: Combine 1½ cups hot water (105–115˚F), yeast, and sugar in large bowl, electric-mixer bowl, or food-processor bowl. Add remaining ingredients, and knead 10 minutes by hand,
5 minutes with mixer dough hook, or 2 to 3 minutes in food processor, or until dough holds together in a ball and is no longer sticky when touched.
Transfer dough to large bowl coated with oil, cover with clean dish towel or plastic wrap, and let rise 1 hour in warm place, or until doubled in size.
To make Sauce: Heat oil in medium saucepan over medium heat. Add garlic, and cook 1 minute. Add tomatoes, cover, reduce heat to medium-low, and simmer 20 minutes. Remove from heat, and cool.
Preheat oven to 425˚F. Divide Crust dough into 2 rounds, and flatten into 10-inch disks with rolling pin or your hands. Transfer to 2 baking sheets, and add Toppings. Bake Pizza 20 minutes, or until cheese has melted and Crust is golden brown.
