It all depends on what you are planning on doing with the phone. The Note has Touchwiz features that allow you to use a pen to take notes and to use drawing applications as if you were using an actual pencil basically. The Note 5 features the same 2,560 x 1,440 Super Amoled display the S7 Edge has. (Although the S7 Edge may have some minor improvements being the newer of the two phones obviously.) The screen on the Note is 5.7 inches in size. The S7 Edge is 5.5 inches. So both are true phablets. (Any phone with a screen over 5.0 inches is considered a phablet.)
In terms of performance, both are beasts! They will both run any app or game with ease! The S7 Edge however gets the nudge here seeing as it's so new it's not even for sale yet. And the Note 5 is 6 months old. But both are screaming fast Ferraris that can handle anything on the Google Play store.
Both phones feature quad core CPU's with 4GB of ram. The S7 Edge just has a faster quad core.
The S7 Edge is also water resistant. So it can handle being rained on or an accidental fall into the sink. (Note it's water resistant! Not waterproof.)
The S7 also has the ability to use MicroSD cards for extra storage for movies, music and photos. (Not apps)
Otherwise both phones are similar. The Note 5 has a 16MP camera that was rated number 1 along with the Galaxy S6 for 2015. And the S7 and S7 Edge likely step up the improvements with a new 12MP camera that has fewer pixels, but in turn has bigger pixels that allow for better low light performance. Not to mention a better f/1.7 aperture lens with improved auto focus. According to initial impressions, it so far it seems to outperform even the Note 5 and S6. But a full review is still in the works.
So it's up to you! Both are top notch phones!
