How can I get rid of a slightly bitter aftertaste in my homemade gravy? I'm using butter, flour, liquid from roast, salt & pepper.?

    Bitter usually means burnt. Either you've burnt the roux, or the drippings from the roast are burnt from the bottom of the pan.

    add a spoon or more of sugar. Not sure what it is you are calling bitter! I never have bitter i n any of my gravies

    my mom always adds a little bit of brown sugar to her gravy when she makes it from scratch. Maybe that would help?

    Simmer longer... it means your not cooking the roux ((butter flour mix)) enough..
