How do I keep/store white Russet potatoes from spoiling or growing eyes? Is it best to keep them in the refrigerator or not?

Store in a dry, dark place, preferably room temperature or slightly below (not in the refrigerator)
And put an apple in the bag (just a whole apple, any kind), it stops them from sprouting. Seriously. Try it.

Lets get serious here, no we do not refrigerate potatoes, and yes we do store them in a dark cool place, like a basement cellar would do them good.
But this is where common sense comes into play. Potatoes, even in the right conditions are not going to last months and months. They will sprout. Ideally, you should consume your potatoes rather quickly.

Keep them cool and in the dark. Fridge is OK but not the best place. A cupboard in the basement works well provided the basement is dry. The Eyes are the result of too much light, they think it's spring and start to grow.

After purchasing potatoes sort them, looking for damage or sprouting. Remove sprouts and consume (cook) these first. Store balance in a cool dry place, preferably dark. As these are being used if sprout on any are noticed, remove sprout and use first.

potatoes are not stored in the fridge. But you keep them in a cool dry pantry and you're fine. Once they turn green they are not safe to eat- I don't mean green as in moldy lol, that's obvious, I mean the skin goes green and they get eyes.

No refrigerator.
Cool dark locations with good air circulation.
Store away from onions, garlic and shallots.

in a cool dark place. If you are keeping your potatoes till they get eyes, you aren't using them very fast. buy fewer at a time.

NO do no tkeep them in the fridge, keep them in a dark cool place. Growing "eyes' is not a problem.

In a dark cupboard is fine, I find that they get the eyes as they get older, and their fine by the way. Just buy what you'll use in a week.
