What can I use to substitute butter when making vegan ganache?

I am a macaron chef, and I have an increasing number of clients asking for vegan macarons. Now I have mastered making the shells without egg whites, but I want to provide the same quality ganache for the inside as my ordinary macarons. Usually for the ganache, I boil cream with my chosen fruit/chocolate/flavour, depending on the filling, add corn flour to thicken and then add white chocolate (which I've substituted with vegan white chocolate) ...when my mixture cools down, I usually add around 50g of butter to give it a thick consistency plus added flavour.. what can I use which is affordable and practical, since I have to produce around 1000 macarons a week!

    fruits and vegetables when unripe has starches as carbohydrates and transforms into fructose when it ripens.

  • Earth Balance Buttery Sticks. I'm not a professional baker, but it's what I use in my baking. Coconut oil might impart a strong flavor on the cookies.

    For cream, there's a product called Mimicreme, or you can make cashew cream.

    I would use coconut oil. It will give a flavor to the ganache that may or may not work with the flavor profile.

    If you find yourself making a ganache that will not work with the coconut then I would go with a neutral vegetable shortening. Keep in mind some are made with hydrogenated fats so check the ingredients.

    You also may have to omit the butter and for some the ganache will be a bit less thick,unless you increase the cream, chocolate and cornflour mixture and make it a bit thicker. Too much of the cornflour may give it a different texture without increasing the rest of the ganache ingredients.

    I am actually impressed that you are making 1000 a week and vegan at that!

    Olive oil, for every 1 cup of butter, use 3/4 cup olive oil, capiche?

    Coconut oil, refined or raw depending if you mind the coconut taste or not. Palm shortening or butter imitation from Spectrum.
