Why does my car temperature keep going up? Is something broken? What's happening?

It has coolant, it hasn't overheated.

It started a week ago, I left the car running with AC in the hot sun for 10 minutes, when I put it to drive it started going up and almost reached the red, I had to park it for 5 minutes, then it went back to normal. Since then, its been doing the same thing, now I have to drive differently, either faster or slower, or turn off or on the AC for it to go back down to normal.
