It's just a common style that they tend to use, not all of them are like that though.
Why do games have to be realistic? Games used to be a way to escape from reality. I could be a super hero, an alien bounty hunter or an abstract shape, these are of course very unrealistic scenarios. Now we seem to be going into realism, we already have work simulator games in VR, we need to take a step back and start doing more unrealistic games
