I don't fry but when I am making stir fry dishes I want the heat pretty high so I use peanut oil for that, I use olive oil for everything else

There are several good healthy oils you can cook with, but it largely depends on the temperature you use.

Cooking oils are classed by what is call "smoking point" which refers to the max temperature that it can be cooked in without breaking down.

For example, virgin olive oil can be cooked up to 420F, but extra virgin olive oil is only good up to 320F. This means you would not use extra virgin olive oil such thing as frying, but you can use virgin olive oil for that purpose.

The only oils that should be consume cold and not be heated are: flaxseed, wheat germ, walnut.

Good oils you may try are: safflower, coconut, corn, grapeseed, almond, sunflower, and avocado.

We keep peanut oil, corn oil, and coconut oil all the time for our cooking. We also use butter for some things we want to saute and have Walnut and Seseme oils for specialty items. I know that sounds like we store a lot of oils, but like the flavor of some for some recipes, and we do not use prepackaged kits of foods! Everything is from recipes!

Yes, we have a bottle of EVOO for dressings etc when we wish. But it is more for oiling ears and stuff than for cooking! Too low of a burn point to use for even sauteing!

Do not use Extra Virgin olive oil because the smoke point is too low. Other than that, most oils are good for cooking.

Canola oil is bad, it's GMO and toxic. They found a way to minimize the toxins enough to market it though. Canola oil is great for cooking!!! It has no flavor and lets you taste the food by itself. It's just not the healthy choice. If you want a more healthy oil.... olive, coconut oil(not processed), etc.

I think coconut oil is the best, but I use olive oil for now. Cocounut oil can get expensive, even the cheap brands.

(Actually, extra virgin olive oil *is* okay to use for higher temp cooking, it's been learned recently:

    https://healthimpactnews.com/2014/myth-buster-oliv... .)

Many people today believe the "healthiest" oils/fats to be the ones I mostly use:

    ...olive oil (EVOO, not refined)

...avocado oil ...others like walnut oil are good too but expensive

...coconut oil (solid at temps over about 75 F)

    also:

...butter (best from grass-fed cows like Kerrygold butter, tho not essential...and best to use for eggs, or for flavor *along with* an oil that has a higher smoking point)

...pork fat/drippings (lard, especially "leaf lard"), chicken fat (schmaltz), and beef fat (tallow)

I use refined coconut oil because it has no flavor in frying and baking. But I have some non refined coconut oil that I use specifically for baking cakes, muffins, etc because I like the mild coconut taste.

I've been using avocado oil lately, which is said to have a very high smoke point.
