What, to you, makes Sourdough bread just the perfect thing which it is > ?

There's a place in Madison, WI that specializes in sourdough. I go there while driving through. They make an awesome sourdough french toast with raspberry compote and fresh made heavy whipped cream. You really feel guilty after eating it. I can eat a lot in one sitting, but I can barely finish it. I wouldn't say sourdough is the best thing ever, but it's pretty good in any form.

Sourdough bread with butter or with tuna, butter, and lime taste soooo good about now.
