Driving a manual transmission on the highway?

1) If I'm in 5th gear going 55+ and the car in front of me slows down to 30 mph to turn, can I stay in 5th gear or do I need to put it in neutral and start back out in 3rd gear and work my way back up to 5th?

2) Should I always start in 1st gear? Or will it hurt to start in 2nd?

Yes you can stay in 5th at 30. If you wanted to you could change back to 4th but it isn't necessary and if you are fully stopped, you need to start off in 1st gear. You know when to change gears when the car starts to labour but we change before that happens. It will come naturally to you with practice.
