How to read mixed signals from a date?

So I've been on two dates with this girl, and they've gone well. But I know what signs to look for when she's ready to be kissed, and they haven't been there. Yet at the end of both dates she texts me right away to go on another. She mentioned previously that this one guy was really touchy on their second date and it was so off putting that she gave him a high five when he went to give her a hug. For the third date, we are hiking, and then she's coming back to my place to make dinner and watch a movie together. The first two dates were coffee, and bowling/smoothies, so I feel like this third date will create the best opportunity to go for the kiss. Is she just shy when it comes to physical contact? I know they always say to give your first kiss on the first date, but that wouldn't have seemed right.
