place potatoes, carrots and onions in the bottom of the crock pot.
brown the pot roast in a pan till the outside is nice and browned..plop the meat on top of the veggies. add several bay leaves, chopped garlic and onions, salt and pepper. take 1/2 cup red wine, or dark beer or water and deglaze that pan you seared the meat in and pour this liquid into the crock pot. cover and cook till all is tender. I cannot tell you how long as I don't know how YOUR crock pot works. I have an old one that is a true slow cooker so mine takes at least 8 hours.

About the easiest thing. Take one roast. Cut up some onion and carrot and potatoes. Place all in the crockpot. Season as you wish. Pout in a 1/4 cup liquid-doesn't matter if it is beef broth or water. Cook on LOW 8-10 hours.
Remove all, strain off the liquid into another pot-you can add a roux to thicken the gravy if you wish, but most times I prefer it au jus. Let roast rest for 10 minutes.
Slice across the grain and 'hope' it stays together long enough for presentation-it probably won't-serve with gravy and veggies.
Sprinkle with minced parsley if you are trying to impress someone.
The whole trick to using a crock pot is to NOT take the cover off. If you do, it takes the machine 15 minutes to get back up to heat.
And if you are going out, put the crockpot into the sink. As safe as they are, in case something goes wrong, wouldn't you rather scorch the sink than burn the countertop?

Here's my moms recipe. Cut up some potato's and carrots and put them on the bottom of the crock pot. Put your roast on top and put a few more carrots and potato's around the sides.then, top with sliced or quartered mushrooms. Next, pour on a prepared packet of beefy onion soup or mushroom soup (has to be dry kind not the kind in a can). Let that sit for about 6-8 hours on high but flip the meat 1/2 way. You can serve right out crock pot, or, my mom will take everything out and put it in a pan to bake it for maybe 45 minutes to get a nice crisp on everything.

If you want that "oven" flavor, brown the roast in a little oil on all sides before putting it in the crock pot. If granulated garlic and diced onion share the browning pot, so much the better. Use beef stock, halfway up the side of the meat for a braising liquid. Add onion, carrot and celery when your start the pot. If it's possible, brown potatoes in oil before adding to the pot. Best is two hours before serving.
Set the pot to high, and try for six hours of cooking.

Actually, CKNGBBBLS gets my vote, that is exactly what I do.
As for the Wine, if you wouldn't drink it, you wouldn't cook with it. Also note CKN "or a dark beer". That does not mean Pilsner or Guiness. I find those two affect the taste.
If you do not use alcohol, use a stock, lock a beef stock or vegetable stock. Once you drain off the juices Jodie into another pot, the flavor of the gravy from that juice is incredible
