What is it called when you saute vegetables with meat?

I like to dump enough chopped vegetables into a pan with my pork shoulder or whatever to have a gob full with every bite of meat.

Is this a pesto or a vegetable sauce? Is this a technique other than lazy?

It is neither. It is a mess. IF you want to make a good dish, cut your pork tenderloin into bite size pieces and stir fry them properly. And your vegetables should be Raw when you start-frozen in a wok is just nasty.

pesto is a sauce made from fresh basil leaves, pine nuts, garlic, Parmesan cheese and olive oil.

Sauces are generally runny: think gravy or spaghetti sauce.

I don't think what you do has a particular name its just cooking how you like to eat.

No; it's cooking what you like to eat; nothing wrong with that but when you get a bit older you may want to refine it a bit.
