How long should I wait before quitting my job?
I currently work in retail as an assistant manager. I have been there for years. But am realizing I am not a people person and the job is very stressful and unhappy for me. The store manager had a stroke about a month ago and I have been running the store by default. My feelings haven t changed, but don t want to screw over my coworkers in a time of crisis. I m not sure whether the store manager will return or not, I feel like it will never be a good time to leave... how much notice would be appropriate?

You can leave immediately. Were you promoted to manager when your coworker stroked out? If not, what do you owe a company that is happy to pay you assistant manager pay and have you do manager work? If it's been a month and the owners haven't taken steps to secure their business, then that's not really a place you want to be working as it doesn't sound like the owners are that smart.
