What happens if I don't renew office 365?
Can I stil use word 2016 and the rest of the office suite? I don't want to renew because its so expensive for no evident reason...

Microsoft's goal is that you lease their software and keep your files on the cloud. So if you do not keep up lease payments, you cannot get at your files. They hold your data for ransom.
If the files are on your computer, you could always use LibreOffice.
