Would a slipping water pump belt cause my heat gauge to jump around when hot, and why?

I have a 1983 ford f150,302 the heat gauge, after warmed up and running will take off from straight up and down, go to hot for a few seconds, then come back down to almost vertical. I have changed therm, added new winter anti freeze, new rad cap, pressure tested system, cleaned heater core. Sometime the belts will squeal when started..i noticed with rad cap lose temp ran perfect...why? THXS

    That's what the temperature gauge does when there is air in the cooling system! Evidently you don't know how to purge air from the cooling system or else the head gaskets are bad. You did do a pressure test so I'll assume the system held pressure and doesn't have a leak. Time to have a "block test" done to confirm if the head gaskets are leaking.

    I do not know the vehicle but seriously doubt whether the pump is driven by a belt unless it is the timing belt, if it has one, and if that is slipping you would have a dead engine.
