Firstly, I have a few sources to recommend for all your sex ed needs:
-autostraddle.com - an online magazine run for and by queer women. It has an entire sex ed section.
-scarletteen.com - a site dedicated to providing comprehensive and inclusive sexual education. It's aimed at teenagers but is great for anyone.
-ohjoysextoy.com - a webcomic with wonderfully helpful, fun art. It covers all sorts of topics, but there's an entire sex ed section for you to peruse.
Next, onto your question:
What is your definition of "have to?" There are some places where they are useful in lesbian sex, yes. Here's a list:
-Put them on toys (dildos, penetrative vibrators, anything that's going inside anything else)! It makes cleanup easy and reduces worry about keeping toys clean. Most STIs that queer women contract are gotten through sharing toys that were not properly cleaned first. If you put a condom on it every time, then it's just not an issue :) You should also always research how best to clean your toys, since different ones have different ways of doing so.
-Don't have a glove? Use a condom! If fingers are going in anywhere or coming into contact with fluids, they should be gloved. In addition to preventing the spread of any STIs, this will also reduce the danger that a long/sharp/painted finger nail could pose to a vagina. Plus, nothing hurts dry/cracked skin or that little paper cut more than coming into contact with your lady's ***.
-Don't have a dental dam? Use a condom! Some STIs can be spread orally. The most common is Herpes (cold sores). It's important to use barriers if performing/receiving oral sex to prevent the spread of things like that and to prevent yeast infections or UTIs (urinary tract infections). You can get special things called dental dams for this purpose, but can also cut open a condom and use it like a sheet of plastic wrap to go between a tongue and genitals.

Yeah, You are best to use dental dams (Thin bits of latex that you place over the vulva to stop bodily fluids mixing) when having oral sex. If you do not have access to dental dams you can use a condom that you cut in half to make a sheet. Use condoms when sharing toys and change them. Get yourself tested regularly for STIs.
It's important to protect yourself from STIs even though pregnancy is not an issue. Safe sex should be taught for every sexuality.
