Lets say I get into an argument with an asian guy, its getting really heated and we might come to blows. I refuse to fight because I assume he knows martial arts. Is that racist?

I don't think so, what i think is you're building a stereotype about the asian guy and would try to assume that since he's asian, he knows martial arts
Racism is a different thing, whereas you believe that other races are not as good as yours and discriminate them

No. Being racist is holding the belief that one race is superior to others or another. Assuming all Asian people know martial arts or are good at math is just ignorance.
Assuming something about another person based on their race is a slippery slope.
