How can I improve my breakfast burrito?

Something is lacking in my breakfast.

I cook a pack of bacon and a half-pack of Tater Tots on the weekend because these take a long time to cook. I am also NOT using cheese for stomach/health reasons.

I basically:

* Scramble an egg

* Slice 1/4 avocado

* Nuke bacon and tater tots

* Roll everything into taco flour tortilla

* Pan toast the burrito on 4 sides

The avocado & eggs are seasoned with salt & pepper. Toasting the result adds a great flavor. The Taco sized tortilla is a bit small, but I feel better eating modest portions.

The result is a good, tasty breakfast, but feels like something is missing. It's a bit dry & heavy.

I tried adding salsa - but onions and garlic is too harsh for breakfast. I have done a swipe of sour cream which helps add moisture, but not enough.

Should I try to find a green salsa with less onions or add beans? My favorite restaurant breakfast burrito added rice. Perhaps some diced tomato's with the eggs? What do you recommend?

    Add more sour cream and a sprinkle of cheese. Hate to break it to you, but if you can't have cheese you can't have sour cream either.

    Rice seems too carby, I would try beans and tomatoes.

    If you want it less heavy, replace tots with roasted potatoes.

    Where's the bell pepper and tomato? How about some cilantro?

    You could mix some salsa and plain yogurt together for a sauce. It would be more creamy and less spicy than regular salsa. You also might find that tomatillo salsa (the green stuff) has a sweeter flavor.

    You could add some additional spice. Chili powder? Cumin?

    Odd that you eat a whole pack of bacon and half a bag of tater tots but won't eat cheese due to "health" reasons.

    Sriracha is what is missing. But ketchup would be a close runner-up

    my grandson doesn't use cheese, sour cream or eggs in his breakfast burrito. I make them with shredded potatoes, sausage and bacon, chopped tomatoes, and a salsa I make for him that doesn't have peppers or onions in it. Salsa: cucumbers, mangos, guava, and strawberries all chopped fine. Is sweeter than those pepper/onion salsas, but he can eat it without stomach problems.
