I've had an unopened apple pie in the fridge since last Tuesday, will it still be okay to eat?

    Yes - chilled/frozen items that are still in their packaging remain good/okay to eat for YEARS.

    It would have been ok sitting on the counter for about 5 days probably closer to 7 days.

    If it was frozen then surely yes. If you wrapped it well in the refrigerator not frozen then it's good for 3 days after you made it

    Should be ok to eat. Sugar is a preservative.
