Why has my 16GB phone only have 7GB free?
My old 8GB phone had around the same space available. It says the firmware takes up 6.44GB and I just got it.

You most likely have updates that you have to do to the phone so that it installs the firmware.

You can factory data reset your phone. Then you can see your original space. You can also uninstall your large size apps.

Delete pre-installed apps you don't use. I do this with every cell phone I get. The companies load a crap ton of apps they support hoping you will use them. Like with my iPhone, it's very own clock (why would I need a clock??? It has the time up top!) its own step counter which takes up more space than its competitor.. News apps (I can google the news).. etc etc! I freed up a lot of space deleting useless apps. Some were useful but I prefer the versions that don't need a bunch of space.

Various fragments and hidden things clog our phones. Get the app Dr. Cleaner - from Trend Micro, FREE, and very effective. Run it a FEW times when you first get it - and be ready to be AMAZED at how much it cleans. After that we run our every few day s- always finds something to clean out, but not as dramatic as that first time.
