Why is half gallon and gallon chocolate milk thicker than chocolate milk made with chocolate syrup?

    it's called agar, or seaweed.

    Chocolate milk that you buy in a carton often has thickeners added, such as carrageenan or guar gum, which chocolate syrup doesn't have.

    It depends what milk you use when making it with chocolate syrup. Pre-made chocolate milk is made with whole milk (really thick), so if you buy 2% or skim milk and add chocolate syrup, it is going to be a lot thinner.

    They make it more concentrated and add whey and other ingredients.
