Efteling will be open (it used to close for months in the winter but seems open year round now.) But it is a fair travel from Amsterdam, two hours by train followed by an half hour by bus, and of course, the same back.
There is enough to do in and near Amsterdam, but you will need to do your own homework.
I can tell you I liked the hand bag museum, the canalboat that is open to the public, the church hidden in an old house, but that does not mean that you will also enjoy them.
https://www.amsterdam.info/ has a lot of information.
About the Anne Frank house, unless you have read the book and really want to see it, do not try. It is always busy, the timeslot tickets usually sell out weeks in advance and the line of waiting people is a sight, (two to four hours most of the year.)

There's the International Storytelling Festival, but that ends on the 5th. The Van Gogh Museum has interesting exhibitions and the Anne Frank House is worth visiting.
