Color perception mechanisms are highly dependent on evolutionary factors, of which the most prominent is thought to be satisfactory recognition of food sources. The evolution of trichromatic color vision in primates occurred as the ancestors of modern monkeys, apes, and humans switched to diurnal (daytime) activity and began consuming fruits and leaves from flowering plants.

Humans didn't evolve color vision. We inherited that from ancestral forms.
Our ancestors kept color vision because it helped them tell ripe fruit from not-ripe fruit.

Primates generally have color vision. One factor is that it's much easier to identify berries and other fruit with color vision.
