What should I do with really salty (minced) chorizo?
I bought a role of chorizo and it ended up being especially salty, so i'm not sure what I should do with the rest. How can I counteract the saltiness?

The chorizo is salty. You can try pan frying it for a few minutes, till it is slightly brown. Or you can pan fry it in some water to let the salt come out.

Make burgers... mix the chorizo into at least an equal amount of burger (I would prefer 2 burger to 1 chorizo) and cook the burgers however you normally cook them.
Put a roast (beef) in a dutch oven or similar container. Add 1 can tomato sauce and your chorizo. Cook on low heat covered for 1 hour, add potatoes and carrots (or other vegetables you like with roast) and cover for at least another 30 minutes.

Brown it like hamburger, drain well, then freeze.
Much of the salt will stay with the fat and juice.

I suggest cooking it and then using it in very small amounts with eggs, soups or other compatible meals. Basically use the chorizo as a seasoning for foods where it will be very diluted by the volume of food you are preparing it with.

mix it with fresh ground pork or beef when using it. that will half the salt.

Mix it with unsalted rice.
