Should I text him or wait?
Me and this guy I like are texting and he wants to see me. We texted for a bit and I stopped responding. The next day which is today he didn’t send me another text like he usually does. Should I text him a new conversation, respond to his last text from last night or wait until he text me? He’s 30 btw.

Personally - and as a courtesy to whoever I'm texting with - I will usually end the conversation by saying I'm going to bed, or doing something else that requires my attention, and say I'll get in touch with them tomorrow or another time.
That being said (assuming that didn't happen in your case), I would text him saying, "Hey, how's your day going?" or something similar. Keep it light. The other option is to respond to his text from last night and say you fell asleep and you've had a busy day.

Did his last text need a response? If so, reply to it or just start a new conversation.
