Why do people ask you how your day is but then when you ask them back they ignore you?
I am an introverted guy. I find it to be women that respond to me like this at work. I keep to myself with my conversations, lunches, and breaks.

They're just trying to make casual conversation. In my opinion, it's a rather lame conversational opening – thoughtful people are usually a little more creative in their greetings.
Well, if you actually care, you could think up something a little creative in reply. "It's getting interesting," you could answer, or "Not quite such a heavy load as usual." Be a little upbeat. Carry a bit of the conversational load yourself.
My dad was never one for casual chatter. He was usually pretty quiet, but when he had something to say, it was well worth listening to. I still feel that mild introverts who make an effort are the most interesting kind of people. You'll never catch them braying about the latest football scores or how that other driver cut them off.

I'm a seriously introverted guy and I have never had that happen to me. Is your wish a monotone "you too", or a "And May you too. Have a great weekend"? It's a matter of enthusiasm.

They do so because you don't act like you are interested in talking to them by looking them in the eye or smiling.
For the record, introversion doesn't mean you don't like to talk to people, or have an excuse to be unfriendly.
