2000 pickup truck, GM-- a slow take off when warmed and check engine light will be on from codes. Some vehicles around that vintage can get 'off road' chips and get power back with the 'no cats' programming. stock computer chips will be checking front and rear O2 sensors, racing chips will not check, run greater ignition advance for performance- might use some more fuel, won't pass EPA inspection-but you might not need one for that old a vehicle. replace cats with eliminator pipes or hollow resonators, run a airline to front from airpump or from 'Horn' collector behind grill and less likely to smoke and attract police attention.

It will throw codes and you won't be able to pass an emission test.
You can lose low end torque off the line if you reduce exhaust back pressure too much. That usually results from putting headers on the motor.

" i want to remove the cats but will this result in a power loss?"
No. But you won't see any significant gains either
"And will it throw any codes? "
Is the Pope Catholic? It will throw many codes, and you have some driveability problems as well. As the downstream O2 sensors won't get a true reading.
"Also how many cats does my truck have?"
Two, one right, one left, but it's a one piece ,welded together assembly. .
