How do I handle this gift I have no intention of taking anywhere near my house?
As a gift, someone dear to me got me an Amazon Echo. I don't want this thing in my house, let alone plugged in and connected to the internet. Not only do I have a personal principle against technology that fixes problems that didn't need fixed (including voice-command computers like this, as well as GPS devices and back-up cameras on cars, just to name a few), I don't trust Amazon and I don't trust this AI they want to put in my house and do who knows what with anything it "hears."
But the person who got it for me is elderly and wouldn't understand this gripe. Also they visit fairly often and they'd ask where it was. Any help and ideas?

Tell them you appreciate the thought but you really won't be using it. "Just not my kind of thing." Ask if they want it back or want you to donate it to someone who would have a real use for it. After all you know it was not a cheap thing on their part. https://www.amazon.com/s/ref=nb_sb_noss_1?url=sear...

I don't know much about this product, but is it possible that it could be of some use without being connected to the internet?

Put it somewhere on display and don't connect it. When they visit and realise it isn't working, plead ignorance and blame the grandchildren, neighbors kids, anybody for messing around with the thing even though they were told not to.
