Why don't Canadians and Americans speak Spanish like the rest of the Americas?

Because Canada and America were colonized primarily by French-speaking France and English-speaking Britain, while the rest of the Americas were colonized by Spanish-speaking Spain and, in the case of Brazil, by Portuguese-speaking Portugal. That being said, many other languages were also spoken in the Americas during colonial times, such as Dutch, German, and a variety of Native American dialects. The Americas are, to this day, a multi-lingual place.

Northern America was the "leftover", the places that were sparsely populated by Indigenous people...it didn't attract Spanish people because Spaniards preferred to take over nations and exploit the local population. It was the English who colonized the places the Spanish couldn't really exploit. This is why Northern America is English speaking.
You see, the colonial Spaniards were people who exploited and leeched off of Indigenous people. This is why the places the Spaniards invaded and colonized were mainly the heavily indigenous areas (Mexico, Peru, etc)...places that are heavily Spanish speaking today. Indigenous labor and resources was what "enriched" the Spanish Empire, in exchange the Indigenous people got nothing really but diseases, became improvised, and suffered for centuries.

Because most of Central and South America was colonized by the Spanish, while the US and Canada were colonized by England.

Not many Spanish people ever came to Canada. Loads of French, and English did, so, those two languages are widely spoken.
Spanish is spoken fairly widely in certain parts of the USA, but, again, Spanish people only came to a few parts, and never in any great numbers.

There are like 6,000 languages in the world. Spanish is only one of them.

More people in South America speak Portuguese than Spanish as Portuguese is the language of Brazil. They speak Dutch in Suriname, English in Guyana, Belize and many of the Caribbean islands, French in French Guiana, some Caribbean islands, Canada and parts of the USA, Danish in Greenland and Russian in parts of Alaska.
Many Americans speak Spanish and for a few million it is their first language as they are descendants of the Spanish speakers who became American after the USA took a large chunk of Mexico. Canada has few Spanish speakers but a lot of French speakers so they concentrate on English and French.
