7 months ago I asked a girl out on a date and she said maybe. I took it as a rejection and never mentioned it again. Things were awkward for a couple of months but it was back to normal (banter and interaction became the same) 
 last week I saw her with her friend and as I walked up her friend said oh here’s your favourite person! She kind of panicked and said something to overpower what I just heard.

I really like this girl and today something really weird happened. I was talking to another girl and when she saw she came up and stood beside me. She started checking out the girl and got extremely jealous and uncomfortable.

Then she clearly likes you, she's just too shy to do anything about it. And so she doesn't want to see you get taken away by some other girl.

No, it means she is immature. If she wasn't interested enough to date  you when she had the chance, she is a waste of your time. Don't dwell on her motives. Forget her entirely and pursue the new girl.
