What stuffing do you cook this Christmas?

    I don't celebrate Christmas but when I was a kid we mostly had Christmas cookies.

    I usually buy a dried stuffing mix then make it up and add my own flavors.

    For christmas day I made up a cranberry & apple / herb dried mix, adding 8 ounces sausagemeat , dried sage, a few dried onions & butter along with the chicken stock. Then baked this in 2 foil dishes, one each for xmas day & new years day [which I've frozen for later use].

    I work in a soup kitchen. For X Mas Eve lunch today we made 24 turkeys and 125 boxes of stuffing. I never want to see stuffing again-or turkey for that matter.

    The only stuffing I will be doing is...My face with Prime Rib, smashed potatoes, red cabbage, roasted Brussels sprouts and a chocolate mousse cake.

    none. we don't do turkey for Christmas, we do potluck of every family members favorites so we have a very strange menu but a delicious one.

    The stuffing I'll be making tomorrow is:

    -4 slices of bread pulversied in a food processor

    -1 sprig of homegrown sage.

    -1 sprig of homegrown rosemary.

    -a few basil seedlings, being annuals that's what stage they're at this time of year.

    -1 sprig of homegrown oregano, but I'm going to have to take better care of that plant.

    -1 sprig of homegrown parsley, I'm probably going to have to rip a few up and then bash them up against the wall to release their seeds.

    -2 sprigs of homegrown thyme, but I'm going to have to take better care of that plant.

    -All herbs just stated finely chopped.

    -1 clove of crushed garlic.

    -1 small brown onion finely chopped.

    -1/4 teaspoon of chicken stock.

    -1/4 teaspoon of MSG.

    -1 tablespoon of cooking oil.

    Dump all the juices that drain from the bird into it for extra moisture.

    N.B. I can't emphasise the importance of using fresh ingredients. I will also be smoking another homegrown herb, you can guess what it is. Merry Christmas!
