What recipe of american apple pie do you use?

Not googled on the Internet right now, but the one you use regularly.

    I make my pie filing out of the most tart apples available..northern spies if I can find 'em.

    I use brown sugar and a teaspoonful of cinnamon and cloves for a 10-inch pie. Go easy on the cloves - 1/4 teaspoonful is enough.

    Make double pie crust using any plain short pastry or hot water pastry recipe you like. Preheat oven to 425F. Slice apples thinly and stir in 1Tbsp of sugar (white or brown) if your apples are sweet or 3Tbsp if they are tart, 1/2tsp of cinnamon, a pinch each of cloves and nutmeg, and 1tsp cornstarch. Pile the apples in the crust. Cover with top crust and seal edges. Put pie in oven and lower temperature to 325F. Bake ~40 min.

    Granny smith apples, peeled and cut up

    Tossed with granulated sugar

    Put in pie shell, dot with butter, put top crust on and bake.

    I prefer a mix of apples like Red Rome, Granny Smith..all tart apples.

    I con't have a recipe with exact measurements.

    I slice the apples, add 3-4 cup sugar, a teaspoon cinnamon and 2 heaping tablespoons flour(for each pie) and stir and set aside.

    Make or buy the pie crusts and prepare. Add the apple filling, add the top, slit to make air vents. Brush with water and sprinkle cinnamon and sugar on top. Bake at 350 till golden brown and apples are tender.
