why wont my subcutaneous fat go away?
for 3 months, ive been in a 300 per day calorie deficit, eating 1 pound of protein per body weight and lifting weight like crazy.
My stomach has shrunk, and abs slightly more visible, my jeans are too big for me now, but the subcutaneous fat is still there. WTF??? What do I do. I feel like im doing everything right.

Sounds like you are doing everything right. Just keep going. its just going to take some more time.
Subcutaneous fat is the fat right under your skin. Everywhere. Since it is everywhere its pretty spread out and may be hard to notice. Use a tape measure to figure out your BMI. Especially with the weight lifting the scale may not be giving you an accurate measure of your progress.
Subcutaneous fat follows the first on/ last off rule. The fat you added first comes off last. For men that is usually around the waist. For women it's the hips and thighs.
Epithelial fat surrounds your organs. This is the type of fat that causes beer bellies. It's also more stubborn than subcutaneous fat. There is no way to target it. Calorie deficit with diet and exercise is the only way to get rid of it. Eating super healthy and increasing the amount of fiber in your diet seems to help.
One GRAM of protein per pound of body weight is probably too much. A better rule of thumb is ONE HALF of a gram per pound. Also, more than 20 or 30 grams of protein per meal is probably too much. Only so much gets absorbed and used.

You're building muscle. To burn fat, you need cardio, not weights. To lose a pound a week you need to be in a 500 calorie per day deficit. Your fat is leaving you, albeit very slowly. You say your stomach has shrunk and your jeans are too big for you, so clearly you ARE burning off the fat.
