Probably because the only friends that lying thieving criminals have are another lying, thieving criminals. When crooks are being interrogated by the FBI, and possibly facing the rest of their life in prison, they are eager to make a deal.

Donald Trump has surrounded himself with liars, thieves and family members--just like a mob boss. He calls evil dictators like Kim Jong Un and Putin his friends. The Trump crime family are using the US Treasury like it is their personal piggy bank.

Basically because he was asked to come back by the Democrats now in charge, so they and the American people could hear the truth at last. You have to be spectacularly stupid to believe Cohen volunteered to testify just so he could lie again and get more jail time. As was said more than once yesterday to Cohen: The Republicans aren’t attacking you because they think you’re lying, but because you’re finally telling the truth.

It's very common for people in prison, or people facing charges to "flip" on their bosses. That's how most mafia types get taken down. This is nothing new.

Also, he isn't taken at his word. He makes a claim, such as "trump paid off Stormy Daniel". That isn't enough to take any action, but then he provided of the check, signed by trump. That's what you call corroborating evidence. Nothing Cohen said will be taken at face value, there must be additional information supporting it.

Probably doesn't support your narrative, but reality and conservatism are often at odds.
