Because there is no reason to suppose the properties of reactants have anything to do with the properties of the product(s).

    Examples: H2O, NaCl

SO₂ is a chemical compound. You do not mix S and O₂ to get it, you react them together.

chemical compound have totally different properties than the parts that make it up.

If you just mixed them, nothing would happen, you would have two non-toxic materials. Only when you combust the S in the O₂ do you get a totally different substance, SO₂, which is toxic.
