How do I make oven chips from scratch?
Ok so basically i want to make oven chips from scratch, almost like Mccain oven chips with normal potatoes I buy from the supermarket. I tried putting it in the oven or deep frying it but it does not come out the same. Mccain chips has a different texture.
Please help, I m trying to impress some people

Use a mandolin to cut very thin slices of Russet or Yukon Gold potato. Spray with oil, and season to taste. Spread on a sheet pan lined with parchment or foil. Bake in 450° oven until lightly browned. Turn, and bake or broil other side. Or:
Slice int a 375° deep fryer, and wait for them to float. Remove to paper towels, season and allow to drain. Again, cut them thin.

I doubt you'll impress anyone with oven chips, they're horrible when compared to the real thing.
Cut and dry the chips.
Deep fry at a low temperature and dry.
Deep fry at a high temperature until they are ready.
Dry, cool and freeze.
If you're trying to duplicate an existing brand then you'll need to experiment with potato and oil types and the actual temperature you fry them at.
A LOT more bother than just making chips and an end product that is inferior.

Peel the potatoes, cut them any size you want and you can cook them straight away, you can par boil them and even twice cook them but that's just too fancy for me.

Cut the chips, par boil, let cool & dry then deep fry. Attack the chips with a sharp fork a little bit while they fry.
