Partly tradition, and partly because they are good guitars. There are lots of other equally good guitars, and artists do play them. Think of it like carbonated soft drinks. There's Coke and Pepsi (Gibson & Fender) then there's all the rest.

Many guitarists are traditionalists trying to imitate the sounds of people they heard on records even though they are basing it on what they see from pictures of live performances. For example, many guitarists associate Jimmy Page using a Gibson plugged into a Marshal amp even though he mostly used a Telecaster plugged into the sound board when he did his recordings.

They sound good, they look cool, they're more durable than many other models and they tend to stay in tune a lot better than a lot of other models. But some guitarists find them to be too heavy or find that the neck is too round -guitarists with smaller hands can't play Gibson models as easily as guitars with a Stratocaster shape or Stratocaster inspired construction. The stock parts are good quality and they can be used to play a wide variety of styles, but I find Strats to be more versatile. My main guitar is an Ibanez, I prefer the ovular neck and deeper cutaway and I use a Floyd Rose, not a fixed bridge, but when I had a Les Paul and a Strat I always preferred the Strat because it was way easier to swap out parts and the clean tone was brighter than the Les Paul.

There are all sorts of reasons. Some people are just Gibson people and won't play anything else and some people are just Fender people and won't play anything else. Different models have different tonal qualities, use different types of pickups, and a effects pedals and choice of amplifier also go into the sound you get out of an instrument, so for many, it's how a guitar feels in their hands as well as their choice of music to play.

And for a lot of people, it's what they are influenced by. Most beginners don't start out with a professional level Les Paul or Strat or Tele, they start out with cheap versions of them, or something else, but the artists that influence them the most, that's what they want to play. And if they are serious enough about their music, they'll find a way to get one.
