    Amount of matter ....

The SI unit for the quantity of mater is the mol. Of course, we also measure the amount of matter in mass units (grams and kilograms).

The molar mass is the mass per mole, and that's a way of measuring the amount of 1 mol of matter. But the best, and the recognized way, is the mol.

STP is merely two conditions: standard temperature and standard pressure, but not a measure of matter. Molar volume isn't a viable measure of the amount of matter, nor is volume, in general, since the volume of a substance varies with temperature. It is true that we use volume a lot to measure matter, it is really only useful at a fixed temperature.
