Alpine MRV-F300 or Rockford Fosgate R400-4D?
I have Morel Maximo 6 components
I dont want to play my music too loud but I do want to get the best sound quality-wise from the speaker (not sure if the extra 25 watts RMS of the Rockford will affect sound quality).

Power is the single most distinguishable factor in comparing the sound quality of one amp vs another. All the other characteristics (S/N, THD, Damping etc) are generally microscopic and don't effect audibility.
Max 6's are 90w. They'll run fine on 50w at low to moderate volume. With a 50% increase in power - the advantage you'd hear would be at moderate to high volume where the dynamics would have more life. There wouldn't be a night and day difference, but if you have a relatively quiet car and consider yourself a seeker of sound quality I think you'd benefit from the higher power amp.

Overpowering the speaker will cause distortion and the coil on the speaker will run hot. As long as the gain on the amplifier is properly set, it will run fine. The gain is not a volume control, it should be properly set.
As for the best sound quality, you're hearing also needs to be good. If you have hearing loss or hearing damage, it won't sound good. The crossovers on the amplifier should be properly set. I'd recommend the Rockford Fosgate.
