I usually just saute up some minced red bell pepper, cremini mushroom and shallot. And I grate up a bit of moderate or aged cheddar cheese. Add both of them just before I fold over the omelette.
You could also try googling "omelette recipes" .. the internet is FULL of recipes.

Shredded Mexican cheese blend, black beans, avocado, chopped up red onions, salsa, taco seasoning — (taco meat optional) with some home fries or hash browns and toast.

quiche or a fritatta.
the larger you make it you can cut it and wrap individual pieces and heat them up for a fast breakfast, lunch or dinner.

asparagus, procuttio and provolone cheese
Spinach, roasted red peppers and swiss cheese
bacon, ham and sausage with onions, peppers and cheddar cheese
tomato, spinach, feta and swiss cheese
mushroom. pepper and onion with a little Asiago and Gruyere

What about something simple like bacon egg and cheese biscuit?
What I do is cook my bacon and eggs and then I take the raw biscuits and set them on a pan and separate the tops from the bottoms.
Then I take some sliced cheese and break each piece of cheese in to 4 squares. I can make 8 loaded biscuits from 4 slices of cheese this way.
Then I put a square of cheese on the bottom half of the biscuit and then put a piece of bacon on top of that. Then egg and another square of cheese.
Then I put the top half of the biscuit on and pinch around the sides to close up the bacon, egg and cheese inside the biscuit - doesn't have to be completely closed.
Then you just bake how ever long the biscuit instructions say.
You could really fancy it up if you want and add all the stuff you'd normally put in your omelette inside the biscuit and have an omelette biscuit.
Edit: I use the flakey layer biscuits

Try different spices and add ons like mushroom, ham to see which one you like best
