when i defrost some things the have a very high water content, taste watery. (in this case surimi which is a mock crab meat) why is this?

    When you freeze anything that has a high water or moisture content the act of freezing makes ice crystals. These crystals damage cell walls allowing moisture to come out when you thaw the food.

    In some cases you can just drain off the liquid others you can incorporate the liquid in the dish you are making.
