Will people steal gopro items off bicycle. ?

1st gopro, hero 8. 
BIKE left outside during the day.

Approx. 
2 hours @ shopping center

1 hour @ business district (high foot traffic, high risk area)

4 hours @ yard (visible from street, bike was never bothered in place)

For now just removing camera with thumb screw. Planning to use with case. Leaving case on bicycle, just removing camera. ____I don't want to but if neededuse RED THREAD LOCK. Pain in a** to remove once set. If screws are replaced with cheaper aluminum, heads will be stripped.

Too a thief leaving your go pro equipment or even your bike unlocked for a period of time is a sign of Free Stuff to them.

Yes they will. Even in public, I had a headlight swiped right outside the front door of the downtown library. If it can be stolen, lock it, if you can't lock it, take it with you.

Thieves will steal about anything they feel they can.

In a heartbeat!  Never, ever leave anything as expensive as that on a bicycle.  I take off everything that can be removed.  Lights, bike computer & so on.

If you're really unlucky, the entire bike with everything on it will get stolen.

they will steal a camera. they probably won't steal the camera mount if it requires tools to remove as long as the retail value is less than around $50 unless you're in The Ghetto. they'll also steal your helmet eventually.

regardless, you're likely to eventually have things stolen just enjoy them while you have them.
