What is better French steak ? one with maître d'hôtel butter or one with classic béarnaise sauce?

    Herbed butter is good, Bearnaise is a little overpowering, but I really like sauce au poivre. Somehow with the peppercorn sauce you have great flavor, but can still taste the steak.
