China is near self sufficient in food stuffs. The staple grains are rice in the south and wheat in the north. pork is the most common protein, followed by chicken. Tradition in China is that the chef prepares everything and diners do not need to make pieces of food any smaller, so a simple set of chopsticks is sufficient to eat your meal [or a spoon if the meal includes a soup or gelatinous desert]. Many dishes are fairly spicy -- much of China is quite hot in the summer and spicy foods are helpful with managing the heat.

My personal favorite dish is crispy duck -- it is deep fried and might be served whole [an exception to the not needing more than chopsticks rule mentioned above -- it does pull apart easily since it is very well done].

In many homes and groups, food is served in large bowls or on platters ... a serving utensil is provided so you can take a portion onto your plate.

All types of food are made in china... There is no "national dish."    Although rice is the basic grain that most of the groups in China have in common...
